Book excerpt: Abstract: Twenty-four papers for agricultural scientists, human nutritionists, dietitians, and agricultural journalists presented at a 1980 international symposium on animal products in human nutrition, critically evaluate the contributions of foods derived from animals to a balanced diet. The papers are arranged according to 2 principal themes: the production, consumption, and characteristics of animal-derived foods (11 papers); and the nutritive value and metabolic effects of animal-derived foods (13 papers). Papers under the first theme outline the history of animal-derived foods from the early ages of mankind and discuss economic and resource cost, recent US dietary trends, improved food products resulting from production, processing, and genetic breeding advances, and environmental toxins in animal tissues. Papers under the second theme detail essential nutrients provided by animal-derived foods, and discuss the possible effects of consumption of such foods on hypertension, mild intolerance, food-borne bacterial infections, cancer, and atherosclerosis.
