Book excerpt: In living organisms, glyco-materials (beta-glycans, their oligosaccharides, and glyco-chains) play a decisive role in such biological processes as signal transduction, cell adhesion, fertilization, transport, and immunity. For industrial production, glyco-materials are inexhaustible and renewable resources. beta-glycans, for instance, are essential for the commercial production of food stuffs and other industrial products. The present volume focuses on the glyco-enzymes, which catalyze the reactions (hydrolysis, transfer, and condensation) of glyco-materials and are thus critical for their industrial utilization.
